I am a very good cook and I use to wonder how come I cook my jellof rice at home and it never never taste like DAT party jellof rice.even though I tried all d recipe mentioned above its never the same...but until I tried something new....and dats the secret.......

Its simply the pot used....
The party rice pot its not same like the one at home..

@ Mod, just tell us u went to a parry last week and you realised that despite the fact that you are good at cooking rice,your rice as never tasted like that party jollof rice and you want us to teach you.

I always use Ginger, Crayfish(blended), Garlic and Knor Cube and also let the rice burn a little. It gives out the perfect taste and color of a Nigerian party rice. 100 percent thesame. using butter is an added advantage too.

Lol friends am a cook and I can tell u dis......bay leave 4 smell,diffrent spices and lots of dem while cookin meat.....and enough meat water,enough maggi not white maggi...benny and ko are used plus knorr but I asure u enof magi help...tym n curry enof....and importtantly tomatoes fresh and tin will be plenty....den to sum it up is firewood.....I tried smtin..I made all d preparation and divided the food...cooked 1 on d gas and d other on firewood...lol guess wat...? Firewood sweet pass...even though I let my gas own still born like firewood....

Well as for the party jollof rice, you need to cook it with enough ingredients especially spices based on your taste. These are the steps I know:
1. Use meet with little fat and season it overnight (this will make the spices to penetrate the meat for more flavouring) with onions, thyme, maggi, salt and other spices as you choose.
2. In the morning, parboil the rice making sure it heats uniformly.
3. Fry your seasoned meat. After this pour sliced onions in the used oil-heat a little-put grinded fresh tomato and heat intensely. Do not add salt yet for it may cause burning without the tomato getting done.
4. When the tomato turns from deep to light red, mix tin tomato with little water and pour into it stirring well to have a nice mixture.
5. Reduce the heat now and fry gradually. Put grinded ginger, curry, garlic, nutmeg and salt. Be adding little little water as you fry gently to avoid burning.
6. Taste as you fry, if there's no longer sour taste of tomato, know that it has fried wella and secondly the oil and the tomato would have gotten independent by now.
7. Pour grinded pepper and cook for like 1Omins. Add water of the seasoned meat, if not enough to cook the whole rice...add more and cover the pot to boil well.
8. Now get the parboiled rice and be putting into the pot small small, bit by bit. Do not turn it. Once the corners of the pot are boiling, reduce the heat to avoid...you know-burning.
9. Allow the water to sink a bit. Mix the remainig ingredients of grinded crayfish and onions, maggi, salt if necessary in water and smear it on the rice. This method makes ingredients to touch every grain.
1O. When the water goes down to the pot's bottom, turn every every with turning stick. Leave for 3mins and bring it down.
11. Finally your party jollof rice is at this point sending sweet sensation to mostly uninvited guests.


DISCLAIMER: This is what my heroine mum thought me and it has been working wonders as I help family and friends in organising their stuffs. You may also have your method cos cooking is an art full of trial and error but the end justifies the means. Thank you.

Joavid: Ginger and garlic- adds to the flavour and taste. (Although,some cooks don't add garlic)

Bay leaf - flavour

Giant tin tomato paste - the colour(red) and flavour

Plus, lots of curry and tyme.

If you want your jellof rice to taste like "party" rice, just make sure you add enough ginger to the fresh pepper and tomatoes,then grind together.
Also, your tomato paste has to be more than enough.
Then, don't be stingy with your curry and tyme.

Over the top ingredients in moderation is "party jellof rice" wink

You don't need "white maggi" like vedan and all those, knorr is ok.
You don't need firewood also, use your gas cooker.


And some nutmeg too. Ever tried that?

Mogbomoya tinz grin. Me sef look forward to parties cos of that rice embarassed.

Sometimes I get it right, other times na wash. At times I fry the meat and onoin in the oil I intend to use for it but I don't like how the chunks of meat puts black sediments in the finished product so I dont fry the meat anymore. So these are the steps I take...

I fry the onions and harvest them before they dry up.
I put the grinded pepper in the oil and let it fry well.
Along the line, I put the tin tomato paste and seasoning and let every thing fry together for at least 20 minutes.
Once the mixture is drying up, I add the beef or chicken stock and let it fry for another 10 mins or so.
After that, I put in the rice, curry, thyme, bay leaf and water and let it all cook together.
Sometimes it comes out just the way I want.

the secret to the taste of party rice is the pot used in cooking it. I forgotten the type of metal the pots are made from but it contributes to a large extent the way it tastes.
