Am new to ds forum...and ds thread caught my eye....fantatic jb people!!! Can't wait to start wt my own pics...hehehe

Cocoyams...

Use it to make Epkankukwo. . AN Akwa Ibom dish..

The dish is quite tideous to prepare though.

check with an Akwa ibomite for the recipe. Best dish involving cocoyams I have ever had.

Ekpangkukwo is my dad's fav dish. I cnt rmba wen last I made it bt I do rmba hw delicious it gets by the nxt day...
Here's a rough recipe. I hereby take up d challenge to make it ....soon.....pictures too
The only tedious part abt ds dish is grating the cocoyams, after that, ur delicious meal awaits!

You will need:
Cocoyams (N200 pile is fine)
Spinach aka Green leaf (2 bundles)
Red or cameroun pepper (ground)
Knorr cubes
Salt to taste
Palm oil (lots of it)
Smoked titus fish
Periwinkles (still in shell) small cup
Stock fish
Pomo (diced)
and any other condiments you'd like!



Pluck and rinse ur green thoroughly.

Peel and grate ur cocoyams to paste. Use d tiniest grate side available.

Grease the inside of a (medium-large) pot with palm oil.

Depending on the size of ur green, scoop a little of the cocoyam paste into the leaf and roll up the same way u wld a shawarma wrap. It should be barely peeking out from both ends, not be too much and must be rolled as tightly as possible.

Place the roll or 'ekpang' loose-side-down in ur pot and repeat till d paste is finished.

Shred ur remaining green leaves and put in the pot to cover d 'ekpang'. Add all your condiments and ingredients except the palm oil. Gently add water to cover the entire contents of d pot.

Cook on medium-low heat till the ekpang is thick. Test this with a knife. It should have changed in color all the way through. If not fully cooked, do add some more water poco-a-poco. DO NOT STIR.

When fully cooked through, cut the ekpang with a knife to reduce the size, then add your palm oil. Stir again to incorporate, this time witha wooden spatula.

Allow to cook for a few more minutes. You may turn up d heat a notch but the ekpangkukwo begins to burn pretty easily from here on, so watch it carefully.

And yes pls, serve hot or wait till the next day....even better!

I recently switched to whole wheat spaghetti... and guess what? It's not bad, it's healthy maybe not as tasty but with a good stew I am good to go..

"Nigerian Surprise Spaghetti" recipe by toria12. I love that recipe, took me less than 2hrs to cook, atypical of Nigerian recipes..

The guys are complaining nig gals don't want to cook on another thread. Imagine 2 hours ( nano seconds closed to the 2 hours is still 2 hours grin) making spaghetti dish...what if ogbono and egusi soup are on your to do list ?

Not at all honey

Ingredients: onions, garlic, bell peppers, puréed tomato, olive oil, salt, pepper or whatever spice you like.

Method
I fried diced onion, peppers, garlic and puréed tomato all together for 3mins. Added a little water to reduce purée thickness.
Allowed it to simmer for 10 mins. Added salt and other spices. Allowed it to stay on for I think 3 mins.
Thats it Hun. But you can definitely add your own mix to it.
