The name jollof is from there modified as jollof later. Na them be the originator of jollof rice. I once posted their jollof rice here. I love our jollof rice but Senegalese own is on another level. I love the veggies included.
The taste is so diff and heavenly. If a Senegalese make this rice for you, you will chop your plate.

I made this Senegalese Jollof rice after reading the news of it been awarded the best among other Jollof.

It was made with;
Broken rice
Tilapia fish
Aubergine
Sweet potato
Carrot
Cabbage
Tomato paste
Onions
Spring onion
Parsley
Garlic and others.

I made chicken and sausage pizza.

This should be my third attempt at making Pizza. It wasn’t perfect but it tasted yummy. I had a salt problem again

I don’t know. They see me daily battling with pest and diseases, plus water management et Al yet they will harvest without considering the efforts put into growing it.

My tomato are those big beefsteak variety; with less moisture and sweet taste. They harvested the 2 biggest ones when I travelled for 3 days! I may just stop growing.

My peppers are the habanero type you guys have abroad; 2 is enough for stew…

I understand the impact of egg washing, but what impact does oven dispensing from top or bottom have? My oven has both top and bottom heat dispenser and I usually use the bottom one for meetpie. I am curious to learn why I should use the top one or both at once
I don’t recommend you use the top one alone.

To the best of my knowledge, using both the top and bottom burner helps in uniformity; ensuring every part is well cooked

When Akposy posted waffle and the recipe up there, so simple yet people can't make it. Why ? Gadgets and ingredients are expensive they would say.
A simple Gadgets for waffle is 20 dollars or 15 dollars. There are fancy and expensive ones too.
Yet many homes do not have such.
Na almost everything Nigeria can't afford to buy!
Native clay pot for masa sef, they can't afford to buy.
Herbs too expensive - Toor! After buying fish, cow skins, tails, intestines etc for a pot of soup no more money for vegetables - Ahn ahn!
Waffle maker is “expensive” though. I checked online and was seeing 30k - 50k.
Luckily for me, I got mine from an online thrift store recommended by Pocohantas years back. I got mine for 21k (fairly used). One good thing about her is she allows one to pay in installments.

Masa pots are just expensive or these sellers are trying to rip us off. I went to price a nonstick masa pot (6 holes) at a thrift store here, she said 12,000 naira!! 12k for something that is small, already used with no sophistication! I just got angry and left. Things are just too expensive

I made and ate waffles for the first time yesterday!!!! It was delicious. I bought this waffle maker since last year and I have been dragging on making the waffles…but, I did it yesterday!

The toppings was my signature Bailey avocado ice cream filled with chocolate shavings and topped with strawberry, candied cherry and cashew nuts. I also drizzled with some light amber honey


Recipe
1 Cup all-purpose flour (120g)
1/2 tablespoon baking powder
1/8 cup sugar (25g)
1 large egg
1/4 cup melted butter or vegetable oil
1 cup milk (250mL)
1 teaspoon vanilla extract

Mix the dry ingredients in one bowl
Mix the wet ingredients in another bowl
Add the wet to the dry
Mix well; don’t over mix
Put about 1/4 cup per waffle plate
Serve with fruits, honey, cream and/or chicken

Does your oven dispense heat from the top or bottom? Did you egg wash?
Also, you didn’t use fork to put holes on the pies. This is necessary to help steam escape and make the crust flaky and nice

I have a friend who make flour for swallow from cauliflower, broccoli, sweet potato (the orange, yellow and purple) cabbage to mention but a few but she is not into export. Her recent is carrot flour.
I think I know her. She’s doing great. I pray she create more awareness and start exporting soon. A practical class was done last year in Jos on food processing. Unfortunately, I miss the deadline of registration.

I tire for my country.
I posted a video here of what somebody did with cassava. We have so much. Trust me, we are really blessed. But nothing to show for it.

Cashew nut goes to waste. Mango(jam), banana, we can't even make avocado oil, name them.
Is it flowers for exportation?
Or original sugar cane sugar. Honey nkò?
We have loads of plantain but I have never seen plantain from Nigeria here. What about tomatoes like chopped, paste, or full tomatoe in cans. We can't even grind and package shombo( our diff types of pepper) in powder and export. Even dry pepper seeds na market. Habenero and scotch bonnet are very expensive here. They waste in Nigeria. The first pounded yam flour I ate years ago in my village was made in USA. Lol. What an irony. Fufu, at its cooking stage is packaged and sold to people. Yep, fermented cassava. Buy and cook and pound.
Have forgotten the country that exports it but not my precious Nigeria. Or is it ewedu. All the way from Egypt and some north African countries. We will rather come here to insult those eating fufu and ewedu instead of looking for ways to make millions from fufu and ewedu. What about sea food from South south? No Nigerian medicinal veggie is known outside Nigeria. None. Who will promote them? We are too posh for that
We always think of instant gratification instead of future.

Make quik money,build house and buy cars to pepper them.
I will come back to respond and ask questions.

Meanwhile, we are not really posh. Many Nigerians are lazy, entitled and have failed to be creative and innovative. Most of us want instant money (yahoo & runs)

Baking powder as well as baking soda and yeast are leavening agents.
I don’t need my pie crust to rise. It is meant to be flaky. Baking powder is not needed

The content of the dough is fish. I boiled fish with salt, pepper, seasoning and curry.
The fish was deboned and shredded by hands
I fried onions, some pepper and the fish alongside some spices till it turned brown…

For the crust,
3 cups flour
200g cold margarine
Pinch of salt
1 egg
Cold water…add in bits till the dough comes together.

Mix flour together with salt and margarine
Work with your finger tips till it forms breadcrumb-like structure
Add in your egg and water (in bits, about 2/4 cups) till the dough comes together
