Lemon pound cake and my homemade vanilla strawberry chunks ice cream.

The lemon cake tasted like the best thing on earth. Unfortunately, it wasn’t as soft as I wanted it. Next time, I will add buttermilk and yoghurt to work magic to the texture.

Happy Thanksgiving to everyone celebrating it. I don’t know what it is about but I celebrate with you all.

I like carrots cake - mind sharing the simple recipe of your moist cake.

Thanksgiving holidays - time to chop.
Carrot Cake

1/2 cup white sugar
1/2 cup brown sugar
11/4 cup flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
1 tsp vanilla extract
1/4 cup applesauce or buttermilk
2 eggs
1 & 1/2 cup shredded carrot

Mix the sugar, vegetable oil, vanilla, buttermilk and eggs together.

In another bowl, mix the flour, cinnamon, nutmeg, gunger, baking powder, baking soda and salt together.

Gently add the dry ingredients to the wet ingredients and mix till it is even.

Fold in the shredded carrot.

Pour in your prepared pan and bake in a preheated (170°C) oven for about 30 - 40 mins

Carrot cake drizzled with yoghurt sweetened with honey.

It's been a while
Hello! I will commence posting soon....thanks for checking on us.

Here's a small box of lemon cream filled doughnuts, crispy fried chicken, shortbread and black forest cookies I made on Sunday.

For the Crispy fried chicken, I marinated in a mix of greek yoghurt, lemon juice, honey, suya pepper, salt and spices.
I coated with a blend of the hot & spicy variant of pringles, flavoured flour and oat before deep frying at low heat.

For the cookies, it was filled with chunks of dark & white chocolates, diced candied cherry, cashew nuts and raisins.

Meanwhile, I have grafted apple seedlings for sale.

Your progress is inspiring. I started a small snail garden about 2 months ago using 2 tyres and wild snails. Although I don't have time to maintain them (24 snails), I still feed them with lettuce & bell peppers left over from the farm.

From your post, I learnt they need calcium supplement. I might crush some egg shells and feed them with it.

Great work. Maybe I should start a thread on vegetable cultivation
