The difference is the appearance and the strength of the cast concrete. Plank gives a rough cast with honeycombs due to the space between them caused by the segregation of the aggregates during casting and vibration. But when ply wood is pinned on the planks ,it gives a better finish and strength just like when you use a marine board.
Marine board because of it's smooth edge and surface has little space between them hence the cement slurry is able to bind the aggregates together, keep them in place and this increases the strength of the cast concrete and gives a fine& smooth finish.
