Your assumption in your first paragraph is totally wrong. Bookies can remove a market if they detect that their odds are overvalued. I don't know the op, but I can confidently say that bookies see you, else they wouldn't close smart bettors' accounts.

As for your second paragraph, even though nothing is sure, some bookies are very generous with their odds, while others are greedy. As such, beating the generous folks is very easy.
