1. U don't soak beans overnight like u were politely told kiss tongue
That's exercise in futility.

2. Except pepper, onions(lots of it) and salt, Akara don't need any other ingredient to be sweet. I think people from the north add one other ingredient. Akara has one unique taste, any other thing added alters it kiss

3. Go and buy strong blender. Asian blenders/grinder are so good.
I use USHA for my akara, it hasn't spoiled. Since 2015. Packaged and travelled with it grin tongue. I love that grinder. Will look for the picture online
Bought ninja food processor here but I haven't used it for Akara and I'm sure it will do an excellent job too.

4. Just crush your beans and wash with your wooden spoon or long spoon. Takes less than 10 minutes. Soak after crushing a little bit so washing will be easier and faster.
Check YouTube on how to crush beans.

The only problem people normally have with Akara is the quantity of water to add when grinding. I always say enough to make the blade move effortlessly cos if there is no easy movement, it will kill the machine.
I politely reply:

I have tried that method too.
It kills the blender because it is too thick.
You also rub the risk of adding too much water.

Soaking your beans for longer hours or overnight is not advisable.
It makes the beans harder, with little or no taste left .

I tried it and regretted it .
Then, the problem is in the “spicing”. wink
The reason you spice beans AFTER blending for akara and moin-moin.

Beans tastes RAW and BLAND. You season to taste.

Just add a little salt and blend with BEEF or CHICKEN stock instead of water.

Trying something new.
A dash of palm oil in my frying oil for added flavor in my akara. kiss

I saved some diced onion and Scotch bonnet pepper for added tase and color. wink.

I already added half of the pepper and onions to the beans when blending.

Added 1 egg to my blended beans to give more smoothness. kiss

Let the blended beans and egg sit for 30 minutes to thicken before frying. kiss

Then add my sliced onion, pepper and salt to blended beans. kiss

To conserve water usage, use the same water over and over again to wash your beans. Do not run your faucet(TAP wink ) endlessly to wash beans. kiss

Only add some water to wash if you run low. kiss
Washing time only 20 mins. kiss

I used beans flour the other time.
But I have so much beans at home, so will have to SUFFER the washing process. Ouch! grin
Soaked the beans for 12 hours overnight to soften and make it easier to wash. kiss

I am Afemai, not Bini. I don’t understand my own culture, not to mention any other in Edo state. Bini culture is foreign to me. I lived in Benin-City for the most of my Nigerian life but never really understood the language or culture!

Like all parts of Nigeria. . . . There are norms and practices. Do you expect them to forget their own culture and take up foreign ones? undecided

This same “Oba” lived and schooled abroad o! grin
But at least the “culture” is being preserved.

You got it from the Africa store frozen?
Prepared half-cooked and dried in Nigeria.
Then straight to freezer. I do not wash or clean them till I am ready to use them.
They are wrapped in newspaper to absorb moisture and prevent early decay prior to stuffing them in the suitcase.

The snails get here in less than 48 hours. 1 day of preparation and drying, then 1 day for transportation.

I can’t buy snails from ANY African store o!
Too small and very expensive.
Not sure how it was prepared.
These snails come specially from the snail farm to our own kitchen. grin

I cooked my stew normally.

Them washed my “frozen snails” TWICE with SALT and HOT WATER to remove the staleness. I cut of all the “jolo-jolos” wink (all those dangling tins dem).

Then I re-spice with onion salt and garlic.
I always retry the snails so they remain crunchy but soft.

I add the snails 10 minutes to my final stew and let it simmer to soak in the stew’s flavor. wink
