Trying something new. A dash of palm oil in my frying oil for added flavor in my akara. I saved some diced onion and Scotch bonnet pepper for added tase and color. . I already added half of the pepper and onions to the beans when blending. Added 1 egg to my blended beans to give more smoothness. Let the blended beans and egg sit for 30 minutes to thicken before frying. Then add my sliced onion, pepper and salt to blended beans.

To conserve water usage, use the same water over and over again to wash your beans. Do not run your faucet(TAP ) endlessly to wash beans. Only add some water to wash if you run low. Washing time only 20 mins.

It is MOIN-MOIN and AKARA day. ![]() I used beans flour the other time. But I have so much beans at home, so will have to SUFFER the washing process. Ouch! ![]() Soaked the beans for 12 hours overnight to soften and make it easier to wash. I hope it will taste better after all this suffering o! ![]()

sassysure:I am Afemai, not Bini. I don’t understand my own culture, not to mention any other in Edo state. Bini culture is foreign to me. I lived in Benin-City for the most of my Nigerian life but never really understood the language or culture! Like all parts of Nigeria. . . . There are norms and practices. Do you expect them to forget their own culture and take up foreign ones? ![]() This same “Oba” lived and schooled abroad o! ![]() But at least the “culture” is being preserved. Whatever “it” is. ![]() All the best to them. |

armyofone:Prepared half-cooked and dried in Nigeria. Then straight to freezer. I do not wash or clean them till I am ready to use them. They are wrapped in newspaper to absorb moisture and prevent early decay prior to stuffing them in the suitcase. The snails get here in less than 48 hours. 1 day of preparation and drying, then 1 day for transportation. I can’t buy snails from ANY African store o! Too small and very expensive. Not sure how it was prepared. These snails come specially from the snail farm to our own kitchen. ![]() I still get plenty! This wan go last me for anoda year! I go dey chop am smor-smor. ![]()

armyofone:Morning darling sis. ![]() I cooked my stew normally. Them washed my “frozen snails” TWICE with SALT and HOT WATER to remove the staleness. I cut of all the “jolo-jolos” (all those dangling tins dem).Then I re-spice with onion salt and garlic. I always retry the snails so they remain crunchy but soft. I add the snails 10 minutes to my final stew and let it simmer to soak in the stew’s flavor. ![]() Very DEH-lissssssh! |

Today na “stew with snail” hungry moi. I have lots of imported Naija, frozen snails. So diafor. . . . . Voila! ![]() *Rice and Beans will always come in handy*
