Supper. Local Ghana rice(quite different from foreign long grain rice) with Ghanaian tomato sauce and grilled native chicken [fie akuk)]. The native chicken can be served with ground pepper and veggies, epecially when grilled (will try and post pics of the local metal mesh grill mainly used in grilling here in Gh.) for maximum taste. Perfect Ghanaian Sunday afternoon lunch! Waakye(half eaten ) made with beans and sorghum leaves for that deep brownish colour, with shito, veggies, gari and cow knee (kotodwe). Couldn't get eggs in time to boil, but boiled eggs go with waakye well.You're invited. c.c. Mariangeles, LadySwitz

eyinjuege:Hi! Yes, kontomire is the right name for this much loved Ghanaian dish. It is often served with boiled plantain and avocados, as seen in the pic, but 'koobi'(salted fish) may be added too. It goes best with palm oil, just like in your pic. The kontomire leaves can also be cut into thin slices and used for the stew as well. That variation is always made with egusi, and normal cooking or vegetable oil, as opposed to palm oil and is almost always best enjoyed with boiled yam or rice. I'll try and post a pic of that soon. ![]() Edit: i see some sort of fish in your kontomire. Could very well be koobi! |

Mariangeles:The leaves only add some flavor, but a lot of colour. It however adds very little taste, you taste the rice and beans more. I daresay the beans offer even more flavour than the sorghum leaves. But you simply don't get that original colour without the leaves. The shito is not too difficult to make but requires constant attention and stirring. I'll get some tips from my old lady and post the proper shito making recipe for you and anyone who might want to try. I'm sure the Nigerian pepper sauce will do for now tho. Add some spag and veggies to your waakye to complete. I'll post a pic of mine tomorrow ![]() |
Mariangeles:Too bad. Beans will help with the colour and flavour but the sorghum leaves always complete the meal. For now tho I'm sure even with the beans alone your waakye could be great. I have had to make 'beans only' waakye a few times myself, because sorghum is primarily found in the North, while I live in the South, but it was always good. Don't forget your spicy 'shito' tho. Also works well with 'kahuro' or 'wele', which are the Ghanaian words for 'kpomo'(soft cow hide) |

Typical early Ghanaian supper.. Kenkey (corn dough wrapped in corn husk and boiled for about 2 and a half hours) with ground red pepper and 'shito'( burnt pepper sauce with some additions) Traditionally eaten with fried fish but one can add anything they prefer (shrimp, suya etc.)
