Since I changed the gasket the car hasn't run at optimal performance again

With a manual transmission, when you want to accelerate, you choose to downshift if you feel it's needed and there's a direct correlation between engine rpm and tire speed. Shifting your own gears gives such a more powerful, visceral, personal connection to your vehicle compared to an automatic.

It's obvious you have a personal attachment to manual transmissions and I must commend you for your love.
But personal attachment is not equal to faster or better transmission. With a paddle shifter, all you have said I can easily do the same but with better and more efficient results.

The Rewire tried the first method but I wasn’t sure if he put it on neutral or not but the second one he only removed the belt but did not touch the starter.

In both cases it did not roll

This is sounding like engine problem oo.
Tell your rewire/mechanic to try the neutral method in your presence.

I use Honda 3 years e no pull.i dont know how people use theirs,all I know is dat honda is not for everyone. Use yamasida ball joint,if you hear noise,inspect the legs.and you are good to go.for the 3years k used the honda I changed ball joint 3 times,imagine so so cheap fix

Break then clutch. Along the line you would have to change your clutch if you practice clutch before break. Luckily manuals tolerate that type of abuse so it might a very long time before it happens especially in older manuals.

Yes you will clutch to change to N but typically you don't clutch for long periods. Except in lower gear and in slow moving traffic. Some drivers do this but I don't.

Put gear in Neutral and then apply hand break.
Never put of the engine as it makes the streering unresponsive.

Clutch should never be used to slow down. So break first then clutch to change gear to match the new speed.
