The common ways to enjoy akara balls is to pair with custard, pap (ogi), and agege bread; most times, we even enjoy akara with some spicy pepper sauce. This simple breakfast recipe is really tasty, filling and most times crunchy depending on how you prepare the beans paste, It is a complete protein which you need to include in your breakfast menu. ingredients for making Akara 1. 1-2 cups of beans 2. 3 chili peppers (Shombo) or (Ata roda) 3. 1 large onion 4. 1 stick spring onions, optional 5. Salt to taste 6. Cooking oil for frying Steps on how to fry akara 1. Measure beans into a bowl; add cold water to cover the beans. Leave the beans to rest for an hour to soak up the liquid and become soft. Now, with a little pressure rub the beans against your palms to peel the skin until they begin to separate from the beans. 2. Add water to cover the beans, the skin will float to the surface of the water; pass the skin over a colander to strain. Repeat the same process until the bean skin is all peeled and you are left with clean beans. Rinse the beans with clean water and place in a blender; add some chopped onion and pepper. 3. Add about 4 tablespoons of water to the beans and blend until the paste turns out very smooth. Don’t blend your beans with a lot of water, the paste should be thick. 4. Once the paste has been made, you now need to start frying the akara. Add some chopped onions, spring onions, salt to the beans paste and stir well to incorporate air. 3. Add oil deep enough (about 3 inches deep) to the pan and allow to get heated. Use a spoon to scoop the bean paste to the oil a little at a time. 4. Fry the paste on one side for about 3 minutes, once the downward sides are golden brown, flip over to the other side fry as well for few minutes 5. When all the akara in the oil are completely brown, use a slotted spoon to take them out of the oil and drain on paper towel. Serve akara balls with custard, pap or with pepper sauce. Cc. This easy recipe is really tasty and fun to make and indeed a great way to entice kids to love yam. Ingredients needed 1. 1 kg white yam 2. 2 eggs 3. 4 tablespoons all-purpose flour 4. ½-teaspoon cayenne pepper 5. ½-teaspoon nutmeg 6. ½-teaspoon curry powder 7. ½-teaspoon onion powder 8. Salt to taste How to make heart shaped golden yam fries 1. Cut yam into thin circular shapes and peel off the brown skin. 2. Place the cookie cutter on the peeled yam; use a rolling pin to push the cutter through the yam to form a heart shape. 3. Pull the yam to remove from the cookie cutter, and repeat the same process until you are done with the whole yam. 4. Rinse the shaped yams, place them in salted water and boil for just 10 minutes to slightly soften them. Drain the yam from the liquid and set aside. 5. Beat two eggs into a bowl season with a pinch of salt, curry, cayenne pepper, onion powder and whisk to combine. Also, season the dry flour with the same ingredients and stir well. 6. Take the boiled yam one at a time and deep in the egg wash, remove and coat with the dry flour and set aside. Repeat this until all the yams are coated with the egg and flour. 7. Heat a pan on a stove and add some cooking oil deep enough to fry all the shaped yams. Add the yam to the oil and fry. Flip the yam once one side is golden and fry the other side until you have a perfect crisp yam fries. 8. Remove the yam from the oil and drain on pepper towel, serve with stew and sweet drink. Cc. Heat up a saucepan slightly, add about 3 cooking spoons of oil to it, add the chicken to the oil and fry for few minutes until it is golden. 4. Once the chicken is browned, take out excess oil and add some chopped onions and minced garlic and fry until fragrant. 5. Gently add the broth to the same pot with two bay leaves, season the content with the remaining curry, thyme, stock cube and bring the content to a simmering. 6. Add the tomato powder to it and keep stirring to dissolve completely. It will become very thick so you have to reduce the heat to medium low if it starts to splatter. You can add a little water or more of the chicken broth to adjust the consistency. Cook the stew for 10 minutes until it well incorporated. 7. There are three ways to dehydrate tomatoes before blending into tomato powder, you can dehydrate to tomatoes in a food dehydrator, in the oven or simply leave the fresh sliced tomatoes under the sun for few days to dehydrate. Another great option for doing this is to use the toaster oven, which has the advantage of not crowding up an appliance that you need as frequently as the regular oven. All you need to do is to place the sliced tomatoes in the toaster oven and then set it to its lowest point. To make tomato powder You will need • 3kg of fresh tomato plum • 1 cup of fresh red chillies, deseeded • 3 scotch bonnets • Wide tray or clean flat surface will do Easy Steps to Make Homemade Tomato Powder 1. Rinse the tomatoes and peppers well and remove the stems. 2. Slice your tomato into ¼-inch slices and line them on a flat tray or surface. 3. Spread the tomatoes out so that they don’t lie on top of each other. 4. Keep the tray in a very sunny spot until they're perfectly dried, which could take a few days. 5. If you notice some houseflies, you can put some mesh material over the tomatoes, to keep the flies away from getting to it. 6. After drying, the tomatoes for two days and they are still flexible, don’t be in hurry to take them away from the sun, there is likely a tiny bit of moisture. You can flip the tomatoes partway through the process for them to dry inside out. 7. Once the tomatoes are dried and brittle, it means the moisture has been thoroughly removed. 8. Bring the dried tomatoes into a blender or food processor, blend into a smooth powder. Store the tomato powder in a Mason jar or airtight container and use when needed. UNIQUEISRAEL:I don't think its difficult to get coconut, the only issue is the cost, but it depends where you're located. Like where I am one medium coconut is #300 and its not funny at all. |

Joemetry:Yes dear, especially if you want the milk to come out very creamy, but if you want to use the milk for coconut rice, you will have to add more water to extract as much as you want; at least 1 litre will do depending on the quantity of rice you are making. |

Joemetry:Sorry dear this is coming late. For now I don't really have a standard cup for my measurement , most time i simply use my eye lol! but will sure get one soon. A standard cup is about 250ml, I made use of this popular medium custard container which measures about 540ml of water. This doubles the standard measuring cup though. You know the coconut was quite much so I had to double the quantity of water to extract more milk. If it was just one piece of coconut I would used half of that same container. For the salt challenge, it is best you add a pinch at a time and taste to check if you're OK , then add a little more to adjust to your very taste. You don't have add 1 whole teaspoon at a time especially if you are adding other spices like maggi. Hope this was helpful. |
