Yam Pepper soup is really a comfort dish and it is perfect for colder days and even during normal or hot weather, yam pepper soup is well acceptable, it leaves you warm and refreshed during cold time. Also watch the quick video above to see how I made this. For the ingredients I used: Yam Pepper Soup Ingredients 1. ½ kg of white yam cut into smaller chunks 2. ½ kg of meat, tripe, tenderloin or any type 3. 3 cubes of bullion or Knorr cube 4. 3 pieces of Calabash nutmeg (ehuru) peeled and blended 5. 1 large onion, chopped 6. 3 fresh scotch bonnet or hot chilli peppers (ata rodo) 7. 3 cloves of garlic, peeled and minced 8. 1 handful of fresh basil (scent leave)or mint leaves, chopped 9. Salt to taste Steps on How to Prepare Yam Pepper Soup 1. Peel yam and cut into smaller cubes, rinse in water and set aside. 2. Cut meat into tiny pieces and separate the tougher meat (tripe) from the tenderloin. 3. Season the tripe, which is tougher with pepper, salt, onion, 1 stock cube, ground nutmeg, and mix well. 4. Add 1 cup of water to the meat and bring to a boil, cook the tripe for 20 minutes until it is almost tender. 5. At this point, the liquid must have reduced, add 1 cup of water to the content and then combine the tenderloin and the yam cubes to cook with the tripe. 6. Add in more onion, pepper, 2 beef stock cubes and ground calabash nutmeg, stir and taste for salt. Leave it to cook for 20 minutes until the yam and the beef are soft. 7. Ones the yam is soft, add in the chopped basil to garnish the pepper soup, stir very well to combine. 8. Cook for few minutes on medium heat and your yam pepper soup is ready. Enjoy yam pepper soup as a main meal.

[b][/b]Stir-fry Couscous Ingredients 1. 1 ½ cup of dry couscous 2. 1 medium smoked fish/chicken, shredded 3. 5 medium tomatoes chopped 4. One medium onion, chopped 5. 3 medium carrots, chopped 6. 2 scotch bonnets, blended 7. 1 small ginger, blended 8. 2 seasoning cubes 9. 21 large stick of spring onion, chopped 10. Curry and thyme, 1 teaspoon each 11. Salt to taste [b]Directions: 1. Add 1 cup of water to a pot and place on heat, add salt and 1 seasoning cube to the water. Once the water has started boiling, add couscous to it cover and let it soak in the liquid for 5 minutes. If you have chicken or beef stock make use of it instead adding seasoning cube 2. The tiny granules of couscous need time to soften. Make sure your pot remains covered to capture the steam from the hot water. 3. After 5 minutes, the liquid must have dried, take the couscous off heat and set aside. 4. Place another pan on heat add 3 tablespoons of cooking oil to it; add ginger and onions to fry for 30 seconds. 5. Add the chopped tomato and pepper; stir-fry for 5-10 minutes until it turns soft. 6. Add in the chopped carrots and the smoked fish/chicken and let it cook for 5 minutes on medium heat, season the sauce with thyme, curry, 1 stock cube and stir to incorporate. 7. Stir in the cooked couscous and mix properly to coat with the sauce, add the chopped spring onions and stir. Let the couscous cook for 3 minutes more while stirring. 8. Asun is a roasted/grilled/smoked goat meat stir fried pepper sauce; this is one of Nigeria’s popular small chops commonly served at weddings, parties or birthday events. There are different ways of roasting goat meat for Asun, you can roast goat meat in the oven, grill goat meat using charcoal pot, over bbq fire or you can cook your goat meat on the stovetop. If you have been looking for a simple way to make Asun (peppered goat meat) and maybe have no access to oven or grill, this platform is exactly where you get the easiest method. You can now make your spicy peppered goat meat without stress. I also have a quick video on how to make this delicious delicacy. check it out too. For ingredients I used 1. 1 kg of goat meat (with the skin on) 2. 6 scotch bonnet peppers or as desired 3. 2 red bell peppers 4. 3 green bell peppers 5. 2 medium onions 6. 3 goat meat seasoning cubes (Knorr cubes) 7. 3 cloves of garlic, optional 8. Cooking oil for frying of the meat 9. Salt to taste Steps On How to prepare Tasty peppered goat meat ever 1. Season goat meat with chopped onions, salt, garlic, pepper, 1-2 goat seasonings cubes and mix to coat very well. 2. Cover and place the meat in the fridge to marinate for 40 minutes to absorb the seasoning. 3. Bring the meat out of the fridge and place in the pot to cook for few minutes without adding water to intensify the smoky flavour. 4. After 5 minutes, add a little water to cook the meat until it is tender and the liquid begins to dry. 5. Place a pan on heat and add cooking oil to it, add the meat to the oil and fry until they are golden. Remove from the oil and set aside. 6. If you are using the oven, place the meat in the oven rack and grill, turn it occasionally until it is light brown but not so dry. 7. Place another pan on heat, add about 2 tablespoons of oil to it, add the coarsely pounded pepper, chopped onions and stir-fry for 1 minute. 8. Season the pepper sauce with some goat meat seasoning, salt and stir- fry for 1 minutes till you perceive a nice fragrance. 9. Add the chopped red and green bell peppers to the sauce and stir-fry for 1 minute, if it appears dry, add about 3 tablespoons of the meat stock to adjust the consistency. 10. Return the grilled/fried goat meat to the sauce and stir until the meat is completely immersed in the pepper sauce. Garnish the meat with few slices of onion rings and cook for 2 minutes. 11. Apart from using coconut milk for cooking, you can also use it to condition your hair and to nourish your skin. If you are looking for a simple way to make coconut milk at home then follow the simple steps bellow. Steps on how to make coconut milk at home 1. Crack open coconut and drain out the liquid, use a knife to remove the coconut flesh form the pod. 2. Rinse the coconut flesh under running water if there is a need and cut into tiny cubes 3. Bring the coconut into a blender, add water and blend on the highest speed into a smooth paste for 1 minute. 4. If you don’t have a blender, break the coconut flesh into the size you can handle. 5. Use a grater to grate the coconut into a smooth paste and set aside. 6. Place the blended coconut in a bowl, add 1 cup of lukewarm water to it and mix with your hands. Pass the mixed coconut milk over a very fine colander or cheese cloth to strain the milk. Use your hand to press out all the liquid from the strainer. 7. Return the coconut flesh to the bowl and add another cup of water to it and mix, then strain out the coconut milk. 8. Make use of the coconut milk immediately or store in the fridge for about 3-4 days. 9. Since there are no preservatives or fillers added to the milk, the fat in the coconut milk may separate on the top if stored in the fridge, you can scoop the fat out and use for any coconut cream recipe.
