Don't cook before frying, leave in water after washing, should go from the water to the oil. I usually add a lil' water to the oil, prefer it wet fried.

Omo u don't want to know the relationship I have with groundnut. My mama nearly sent me on groundnut deliverance when I was a kid. No be small tin o, I tell you.

Well, since I went cold turkey I have been delivered. But when I go naija, dat deliverance dey fly out of the window sha.

Wanna cook some tonight.

I boil mine in foil. I'm sure you can take any recipe and bake it though.

Peeled black eyed peas - 3 cups (If you can't find them peeled, gotta do it the old-fashioned way)
Oil (vegetable oil or red palm oil) - 3 tablespoons
Corned beef - 1 can
Boiled eggs - 3-4
Tomatoes (I don't have a number for tomatoes. Usually until it's the pinkish color that I want)
Fresh pepper (I use habanero)
Onions - 1 or 2, depending on size
Maggi
Water

Soak and wash the beans to remove the coat. Don't soak them for too long or else the beans will overswell and the shells will be harder to remove. When the entire coat has been removed, place the beans in a bowl and pour enough water to cover it. When the beans are cleaned, you can leave them to soak in water while you get the other ingredients ready.

Boil the eggs until they're hard boiled and cube them. Remove the corned beef from the can and cube it as well. Set them aside. Roughly cut the tomatoes and onions and put them aside.

Time to blend the beans. Place the beans, some of the onions, tomato, a habanero pepper, and some water (preferably warm water) in the blender. Add some of the warm water and then add a little more until the mixture reaches the desired consistency. Do this until all the beans are finished.

***the good thing about moin moin is that the mixture tastes how the end product will taste. So, taste the mixture. If there's not enough pepper, add more (one at a time). If there's too much, blend more beans, onions, and tomato lol.

Add salt/maggi to the mixture and taste until the desired taste has been achieved. Be mindful that there will be corned beef. Add the vegetable oil and mix well.

Start pouring the mixture into foil/pans/tray. Fill them halfway. Then add some egg and corned beef. Fill the remaining foil/pans/tray with the mixture.

For the oven, bake it at 350F. Cover the tray with aluminum and make a water bath for it.

Ogugua, u dey put tomato for moinmoin? Use tatashe i.e Red Capsicum instead, u'll get that redness you are looking and a much refined taste.

Old yam is usually stronger and drier than new yam because it has been kept for a long time and is best for boiling. Once you cut the yam, you'll tell whether its old or new. New yams are typically harvested in August period and that's when they are sold in the market.
