For the bolded, I use Mycroft. I don't use Plex anymore as it has become too commercial. I use Jellyfin instead. Excellent Plex replacement.

Nginx Proxy server with all my VMs on tailscale so I can access them outside of my LAN. Proxmox? XCP-NG? or VMware ESXi for your virtualisation? Any CCTV solutions? Telephony solutions on your homelab?
