Scenario.
You steal some bitcoin and then sell it to an exchanger in Nigeria for cash.
The exchanger then transfers your bitcoin to an online wallet (Remitano, Luno etc)
All these online exchanges have hot wallets that are publicly known.
Once the hot wallet is identified, the exchangers are contacted, all you need is a court order.
The KYC of the exchanger you sold the btc to will be pulled out.
The exchanger is contacted by the police and he then tells the police who sold the btc to him
and the bank account or details of the cash transaction. Somehow your contact no and details will pop out.
How do you think the US were able to trace the MT gox hack, Silk road dark web operatives?
