What I do is I try to make two meals healthy options and make one my regular naija style food.
I don't think I can manage a trifecta of healthy options all day all week.

My DH is same as yours. He will make banga soup and juicy egusi or order big fries and burger while telling me to close my nose. embarassed

That's someone that should suffer with me so that I can keep in shape. grin

@ Moca: Yes, Cashew nuts are a healthy choice as long as you don't overdo it. Moderation is the key. I usually take just a handful in the evenings to take the edge off cravings...



Same thing here but it's punishment I tell you. Having to cook mouthwatering stuff for the family (including their fry-ups) while I have to restrict myself. Not fatty oils, no processed sugar, and minimal salt. Arrrrggghhhh! It's tough jare. Hubby doesn't help when he cooks our typical African soups (Egusi, Ogbolo, etc)

I remember one time eh...it wasn't with my clear eyes that I found ma self in da kitchen making serious poundo to go with his Egusi soup with stockfish and cow leg. Chei! grin grin grin

I've got some bags of pre-peeled, frozen, king-sized prawns, plantain, and ugwu. Is there anything else I'll need to make this apart from Maggi and salt?

How d'you make the sauce to go with this?

I put the unripe plantain with some quantity of water just little above it, added my onion, tomate puree, pepper, salt, cube etc. bring to boil.

when it softens, I added my salmon, vegetables and prawn .
stir.

The salmon have enough oil in it so no need adding any extra.

Like Babe said, eating healthy is much more difficult than working out. I would pee in my pants if Efe mistakenly invites me to her home for lunch/dinner. But tell me to spend 24 hrs in the gym and I won't even bat an eyelid.

Anyways, I love challenges so I'll start from today(so help me God) moreover, I need to lose my post preg fat.

I was never into fruits but I'll give these a trial-

I'm tired of the everyday tomatoes stew, veg soup and all. I beg mum to let me make something else like rice and curry sauce, fish balls for breakfast or just let me try something else mum will say no and dad will keep requesting for heavy foods which we all much go with so I changed to cooking for them and eating something different.

Its good tho because my figure emmm figure 2 Is gradually coming back to shape. smiley

Recipe for fish balls.

Ingredients.

Mackerel fish (Titus fish)
Seasoning (Maggi and salt)
Vegetable oil
Spring onions
Onion bulb
Habenero pepper (fresh pepper)
Egg

Procedure.

Cut and wash your mackerel fish (Titus fish), add a pinch of salt, diced onion, maggi and water. Cook till tender. allow to cool off then debone. After deboning you mash the fish with your bare hands. Wash and slice your spring onion and add to the mash fish. In another bowl, crack your egg, do not beat. With a spoon or spatular, extract yolk (the yolk is not needed) then add the egg white into the mased fish. Dice your habenero pepper ( fresh pepper) and add the mixture . put pan on fire, add vegetable oil, heat to medium temperature then mould fish mixture in balls and fry for a minute, turn over and fry till its light brown. Serve with tea or coffee. Its best taken as breakfast and its really delicious. smiley

Lol. I try to hide the taste. Its either I make a dipping sauce to go with it or I put it on top of a protein. grin That's the trick! In no time, you'll be eating it all by itself.
