dominique:You can use President or Ambassador Butter. I actually used Simas Margarine. It's salted, hence no need to add salt to the recipe. It's not advisable to use Blueband for baking. You don't need baking powder to make yeasted breads at all except one is making Banana bread and some special kind of breads |

Step 9: Cool and Chow ![]() When cooked, remove from the oven and allow to cool for about 10 mins. Proceed to remove the bread from the pan onto a cooling rack or plate. Cut the dough into 8 pieces if using a small pan like mine to give room for more proofing of the dough.

Step 8: Second Rise Cover the dough and allow to rise for about 20 - 30 mins in a warm place. This helps with the dough shape and texture. While the dough is rising, preheat your oven to 180 degree Celsius. You can also use your stove or charcoal oven just ensure that the temperature is not very high or low else you'll end up with a burnt undercooked bread. Pics 1. Step 6: Punch Down (Deflate) the Dough and Shape It Punch down the risen dough. This helps the bread have a consistent and good texture. Step 5: First Rise Place the kneaded dough in a greased bowl. Cover with a kitchen towel or cling film and allow to rise for about 50 mins - 1 hr or till it doubles its size. Pics 1. Step 4: Knead the dough Kneading is very important for the bread texture. It allows the gluten form, which enable the dough to be light and fluffy. You can either knead by hand or with a dough mixer. Transfer the sticky dough to a clean and well floured surface. Knead till the dough is soft and elastic. This should take about 10 minutes if one is kneading with the hands. Pics 1. Step 2: Activate your yeast This is a very simple process! Mix about 1 tbsp sugar and coconut milk (or milk) together. Note: Ensure the coconut milk is not too hot or cold, you need it to be warm so.the yeast can be activated. If you're making normal bread (without coconut), you can mix powdered milk with warm water to get the 1 cup milk. After mixing the milk and sugar together, sprinkle the yeast on the surface. Cover and allow to sit for about 10 mins. After 10 mins, you will see the yeast pulp on the surface. This here proves that the yeast is activated Pics 1. This is how an activated yeast looks like Step 3: Add the Other Ingredients Add in the egg, remaining sugar, flour and shredded coconut. Don't add the butter yet.
