I make a whole batch of pancakes on the weekends that can be eaten throughout the week with tea or coffee or any other drink.

My waffles and my pancakes have eggs in them, and milk as well. Compare that to say breakfast of Akara and bread, isn't that protein enough?

Still not filling - A pancake and an egg is more filling than just eating only pancake by itself.

What other things do you add to your pancake plate? Kobo, tell me you really eat a pancake and be full ? No scrambled egg ?

I made this Senegalese Jollof rice after reading the news of it been awarded the best among other Jollof.

It was made with;
Broken rice
Tilapia fish
Aubergine
Sweet potato
Carrot
Cabbage
Tomato paste
Onions
Spring onion
Parsley
Garlic and others.

Waffle maker is “expensive” though. I checked online and was seeing 30k - 50k.
Luckily for me, I got mine from an online thrift store recommended by Pocohantas years back. I got mine for 21k (fairly used). One good thing about her is she allows one to pay in installments.

Masa pots are just expensive or these sellers are trying to rip us off. I went to price a nonstick masa pot (6 holes) at a thrift store here, she said 12,000 naira!! 12k for something that is small, already used with no sophistication! I just got angry and left. Things are just too expensive

You are right.
I think pancakes or waffle will not be filling without added proteins that is why many homes won't make them. To them, it cost too much to make.

Someething i can't do without - Wild salmon.
Getting ready for the cooking pot - stew or white wine sauce...another 6 hour to decide.

Me too. They are tastier. last I checked was $33 for the largest (5 dozen) at Walmart. Something that was only $20 like last month.

I’m going to Trader Joe’s tomorrow to see. I’d rather buy expensive organic things from them than spend it at Walmart.

TJ is good with organic food. Check out their corn puff i like the sour one...the white cheddar is ok.
Push cart to the India food section The chicken Tika Masala is ok.

I was at Walmart to get copier paper. I decided to check the egg sections to see their prices. High! Brown eggs not available.

DIY herbs and spices don't need any gadgets. We have sun and harmattan that nature has generously given us.
As a matter of fact, all these herbs and spices we buy are sun dried in countries that have less sunlight like Nigeria.

If we can sundry crayfish, why can't we sun dry other things. It is not a post to show who lives wherever( never cared for such anyway from my posts history) but a post that shows we have so much yet we lack everything and is among the poorest country in this world. We should be retrospective.

We are so quick to pick faults instead of look at some posts as challenging. My posts here these days are thrown out for people who like challenge like me and is curious, inquisitive and have innovative mind.

A simple Gadgets for waffle is 20 dollars or 15 dollars. There are fancy and expensive ones too.
Yet many homes do not have such.
Na almost everything Nigeria can't afford to buy!
Native clay pot for masa sef, they can't afford to buy.
Herbs too expensive - Toor! After buying fish, cow skins, tails, intestines etc for a pot of soup no more money for vegetables - Ahn ahn!

Took me all afternoon for me to get it right. Once again I thank the Almighty, my parents, one of my sisters, and chef training class teacher for the cooking skills.
I decided to put a little egusi and some okra in the pot. I used curry powder to colour the special Thailand noodles.

The kind of soup to be drank on a cold winter day. Add cheddar cheese and some more veggies such as broccoli.
