Sanchez01: The vegetable seems overblanched. It is not supposed to come out dark after blanching. Typical efo riro leaves must come out ‘greeny’ yet tender and gentle on the mouth. The blanching technique, is the most crucial aspect to preparing efo riro.
You are correct. I can't really tell what happened to the colour cos it didn't stay long in the water and I added cold water to stop the cooking process. Am thinking maybe the water was too hot but it didn't affect the taste. I will use a not too hot water next time for a more 'greeny' colour.
