mariahAngel: I like plantain a lot, but generally, I don't like that habit of eating while cooking, in the name of "tasting". (Unless I really have to) It kinda ruins the anticipation for the food. Self-discipline is one of my strengths.

Wryhder: Haha. Thanks for sharing the recipe. I have a few things to improve on the next time I make it. I should have cooked the yam a bit longer so that it absorbed more water and the final meal doesn't end up too dry. The quantity of the yam I cooked may also have been too much compared to the sauce. I only paid attention to the quantity in your video after I was done and noticed the 'dryness'.
The usual yam porridge I make just requires adding some ingredients to boiling yam, and I use a lot of water for it so there's plenty of sauce and the yam turns out somewhat creamy. To achieve that result here, I probably need to cook the yam long enough to absorb plenty of water as well as use a lot of sauce, yes?
You are correct. For this recipe I prefer to use those white yams. I cook it till very tender and its moist, so when you add the other ingredients it sucks it all up.
It requires enough palm oil too, the oil and moist creamy yam makes it appear as porridge.
Well done, you can never compare outside food to the one you made yourself with so much love and care.

This is mine. When you want to cook, you turn the red knob to the right and when I put off the heat, I allow it cool before turning the knob back to the left.
If it's not cool, the knob can't move back to the left and if you don't set it to the right when cooking, it's like cooking with ordinary pot.
All things being equal, most pressure pots would serve. Mine is Master Chef and I bought it about 10k almost 6 years ago and it still works perfectly. As far as the clasp is good and you adhere to instructions, e go work.

Nigeria is blessed with lots of delicacies, this soup is one of them. This video is an easy to follow steps on how to cook Ofe Owerri, it's sumptuous and so delicious.
Ingredients:
Beef Shaki (Tripe) Snails Stock Fish Dry Fish Kpomo Crayfish Ede (Cocoyam) Okazi Leaves Ugu (Pumpkin Leaves) Palm Oil Yellow Scent Pepper
I cook the cocoyam till tender. Season the beef, shaki, snails, kpomo, stock fish with seasoning cubes and salt and cover to cook. Add water after 10 minutes and allow to cook till tender. Check and pound the cocoyam if its soft already. If the chewables are tender enough, add palm oil, pepper and crayfish. Cook till the cocoyam dissolves. Check your seasoning and salt and adjust if need be. Add in washed dry fish. Add in Okazi leaves. Add in Ugu leaves. Cook for 5 minutes considering Okazi is a tough vegetable. Serve and enjoy your soup with eba, pounded yam, akpu, semo, etc. All details in the video.

You don't eat Frittata with mind say you want eat everything. One pan is enough for my whole family here. The plantain makes it sweet, you can use not so ripe plantain.
