A very simple to do there is to get an inclined plane i.e a large and strong sloppy plank. The animals can easily disembark to the ground without serious shock and fracture to the legs of the animals. Another thing that can be done in the market is to erect a concrete platform where the base of the truck can rest against. The end of that platform will be sloppy; something like an inclined plane. So that animals can easily descend to the floor of the market. From there they can be taken to the designated stalls.

That concrete platform is called a RAMP. Smaller versions are built in hospitals and churches to give access to those using wheelchairs.
