Last weekend a friend received an order for a parcel cake, so I decided to share the following steps with my fellow cake lovers.

The secret to geting a fluffy cake is by creaming the butter and sugar together at a moderate speed. Once you get that creamy texture add the eggs gently and do not let it coagulate. Fold in the flour. Make sure you sieve your flour first to incorporate air. This will make your cake lighter. Try this victorian recipe : 250g each sugar,butter and flour(self raising). Four medium size eggs 1tsp vanilla 1 tsp lemon juice or milk (optional) Jam and freshly whipped cream for the filling. Try this method and let us know how you get on. |
soledadd: Couples differ in ways of settling quarrels. And its better one finds a way suitable for ones spouse so that issues may not escalat. My own i think may be different. And if applied by another may not work but it has been workng for us. Initially i usually appologise, but hubby sees it as if because i find it easy to render appology it makes me to always be misbehaving then if i appologise it does'nt seem to go down well with him. Again in our case there is nothing like one partner shouting to the other, because if i shout he would shout back and if he shouts i will fire back immediately saying everything i need to say before it becomes too late. At the end we would have quarrelled. No matter what after that we give ourselves some space for one or two hours. Then we would forget everyting and start conversing again as if nothing happened. After the quarrel, from what we voiced out each person will make amendment towards the others grieviances and we move on. No appologies no regrets from any side and no one is expecting appology. Its from quarelling that we reshape our behaviours to suit ourselves.@soledad this works for me and my other half too. You put it down exactly word for word. |
@degurl your fondant streches like gum because of the CMC or tylose powder you add. I never add tylose powder to my fondant except when am making gumpaste. Like eveything else different strokes for different people. It is better to stick to what works better for you. Also climate affects fondant too. So goodluck and thanks for sharing your experience. |

degurl: Thanks Ruby. Do you have an idea of the cost?for the one you are after, it should be from £400.00.you can convert that to naira about £100K degurl: @ruby, how many litre/kg is yours? Now many kg of butter /sugar mixture can it cream at once?Mine is 1.5 ltrs and I cream 750kg butter and 750kg sugar maximum but I think you will need the 2.5ltr bowl, I too am also thinking of getting just the bigger bowl 2.5ltrs. |
degurl: Good day everyone, please i will like some info on Ken wood cake mixer or any other reliable brand. The one i use currently to cream butter and sugar is small and doesn't rotate. I want to go for some thing bigger with rotating ability. Unfortunately shops i have been to doesn't have the type i want. The rotating one i have been seeing is too small (cant even mix upto 1kg butter/sugar).@ degurl my advice to you will be to get a friend to buy Kenwood in the uk and ship it down to you. Ive been using the Kenwood for years and it is very reliable. The other brand kitchen aid ive never used it but I know lot of people who do and ive been told is also a very good brand. It depends on your pocket. |
Everyday is a learning curve. I've never made fondant without glycerine but I will try your recipe and let you know how it turned out. |

schendy: When it comes to fondant, u have to be very careful with recipe 'cos, u have to put d weather of where u are into consideration. If you use the internet recipe don't be surprised if ur fondant starts crying and remains wet. Well, the recipe above works for Amaka, and I assume ( I stand to b corrected tho)that she resides outside nigeria, also, if u want to use the marshmallow in fondant for a cake that u'l eat @ home and not when doing commercial purposes its aiit(I.e covering cakes for customers),but how many would u have to buy when covering a wedding cake. Ill give a recipe that's @ least to my knowledge sure proof of naija weather condition and also cheap to obtain in the market.Without Glycerine and Crisco in this recipe the fondant will be breaking up in bits and too hard. |
