6-(0-1)= 6-(-1)= 7.

This can also work.with the 6-1+1 that you termed arbitrary.
Its 6-(1-1)= 6-(0)= 7.


The trick is to know how to use the bracket when needed.

there is no such number as -0 the - symbol can not be attached to the zero because that does not exists because zero does not have any value, it can not have any negative nor positive sway to its placement.
The - symbol must be factored in with the total of what 0 is being factored with. 0 being multiplied by one or added to 1=2/2.
So that will leave us subtracting as the last process in the order of operation BODMAS.
