[color=#770077]THE DOUGH:
6 cups flour
4 eggs
1 tablespoon salt
½ pound of butter
1¼ cups water
1 egg yolk

16 oz (2 cups or .5 liter) of ground meat
2 medium-sized potatoes
Any other desired vegetables.
Spices
Water       
Combine the flour, butter, eggs, water and salt together.
Knead the dough.
Cover the dough and let it rest for 3 hours.
Dice the potatoes into little cubes (about .5 inch or 1 centimeter length).
Place the potatoes, meat, very little water, and any other vegetables and spices into a small saucepan, and cook until the meat is done. You can taste the mixture to see if it is adequate.
Preheat the oven to 400 degrees.
Roll out some dough, it should not be too thick.
Cut the dough into a circle (use a tool if you want to).
For each 'circle', add a few teaspoons of the mixture in the middle of the circle, then fold the circle over, and use a fork to press the ends together.
Repeat the above steps until you are out of dough, or mixture.
Brush the exterior of all the meat pies with egg yolk.
Place the meat pies on a sheet with a little space inbetween each one, and bake until slightly brown.

Flour
Sugar (to taste)
Salt (a pinch)
Baking powder
Water
Butter
Eggs (boiled)
Vegetable oil

Tools
flat surface or board
rolling pin
knife
deep frying pan
perforated spoon


Method

remove shell from your boiled eggs,
sift flour and baking power together,
add sugar and salt with the flour mixture,
add butter to the flour mixture and knead together till it becomes like bread crumps,
add water and mold into dough,
split dough into sections and move to the clean flat surface,
using the rolling pin, roll out the dough to any thickness (depending on how thick u want your egg rolls),
put your egg at the center of the rolled out dough
wrap the dough round the egg (still on the flat surface)
pack excess tip of dough together and cut off with a knife
Roll the (art work) in a clock-wise manner on the flat surface to give the round shape and to repeat the process above if you have more than one egg
heat your vegetable oil
put in the egg roll for frying (deep frying required)
reduce the heat to give room for even frying
fry till golden brown or desired colour

Hello Amaka. I have seen the recipes that you post here. Do you have the recipe for egg rolls? My cousin used to make it when I was in Nigeria. Unfortunately, she died without divulging the recipe to anyone. I forgot to mention that she never measured her ingredients. Thank you very much.

amaka I ve tryed twice for the egg rolls , first time put too much butter and they melted in the oil, second time they didn`t raised they were a little hard and small, if you can try making them and giving us the measurment that will be the best, without measurment we can`t make them cause we don`t know how much butter,flour,and baking soda we have to put, if you can try and also put the pics , thank you, you are the best!!!

my shrimp mein fun

To make:

Thin spaghetti
shrimp
oil
onions
scallions
eggs
soy sauce
hoisin salt
mixed vegetables
salt and spices

Method:
cook spaghetti has normal. strain and set aside
clean shrimp or use already clean and cooked shrimp(u can get them from stores).
in a wok or deep skillet, heat a little oil and add the vegetables. stir in the spaghetti , soy sauce,hoisin sauce,salt and spices and continue to stir fry.
add the already fried eggs that have been minced to it and add your shrimp.

do not overcook and its ready to munch.
