I just had something that was called "suji or semovita" at an african restaurant (it looked like a ball of dough (white) and goat on the side. Can someone give me a recipe for this? Can I also get a recipe on how to cook goat? I am an american and love african food. They don't sell it where I live and I loved it so much that I want more. HELLLPPP!!! thanks.

Re: Nigerian Recipes by Pearlesq(f): 10:50pm On Jul 06, 2007
I've attempted to make it a couple of times, but I think that I am doing something wrong. The chin always turns out too dough-like. It isn't crispy on the inside like it should be. I've adjusted the temp of the oil, but to no avail. Do you know what I could be doing wrong? Or is it just a faulty recipe that someone provided?

Are you using too much liquid maybe too much milk and water?
Re: Nigerian Recipes by Pearlesq(f): 3:07am On Jul 07, 2007
That just could be the culprit. I did use more than the 2 tablespoons that the recipe called for because I thought that the dough was too stiff.

Re: Nigerian Recipes by drrionelli(m): 9:26pm On Jul 17, 2007
Are there any good cookbooks that any of you would recommend? What are the titles and, if you know, the publishers?

Also, are there any well-known "celebrity" Nigerian chefs?
Re: Nigerian Recipes by omoge25(f): 2:29am On Jul 18, 2007
celeb naija chef's i wish, that would be nice. i've not seen any naija cookbooks here in the U.S., it would be great if there was one though, a collective of recipes from all over naija. Regarding the chef thing i dont know where you stay but here in Texas some of those naija resturant cookers/chefs are really nice, tell them you want to learn how to make a certain dish, some will let you watch them make it and right down the recipe. A person could probably compile a list of recipes that way
