BlueRayDick: What part of Nigeria is Yam expensive? There's yam almost everywhere in Lagos now; you see Hausa guys hawking it with wheel barrow here and there Is it not this PH. Can't get yam, tomatoes is expensive, meat is worse since this lockdown. The person selling sales stale meat and sometimes when you put inside water, the water becomes green. I sincerely can't wait for all this to be over |

BlueRayDick: Immediately I saw that Àsaro posted by Akposy, my mind just dey tell my brain say I must chop àsaro today, it have tayed I last had one.
So I had to dash out and get ugwu leaves which I feel is the last ingredient that crowns a nourishing yam porridge.
Required : Yam, diced ponmo, dried prawns, smoked fish, palm oil, chopped ugwu leaves, seasoning, roughly blended tomatoes and pepper onions, and salt to taste.
Process: I followed a video I once watched on YouTube. So I started by heating the palm oil for few minutes and added onions to it. The roughly blended pepper was added to the mix after which I allowed it to fry for about 3 mins on medium heat before adding seasoning cubes( I used knorr chicken)
Then I added the yam to the stew on fire along with the dried prawn, diced ponmo and smoked fish to the mix. Immidiately, I added just enough water to cook the yam and added salt to taste.
I allowed it to cook for 14 minutes and checked to see it was done, so I added the already washed chopped ugwu leaves and allowed it to simmer for 2 minutes before stirring every every together. I took it off the fire after 2 more minutes and served.
Lunch is served Beautiful and inviting. Yam is very expensive here if not I'd have made this. Been craving for it since last week that I had to trek for almost 20mins to the house of the person selling yam only for him to show me one rejected yam for 600. I really miss my mum place because of things like this. Cheap and easy to get |

Ishilove: When you turn the fried stuff into the beans, you mix, right? Also what is the quantity of oil to fry? Yes, you mix. I'm not good with measurement but the oil shouldn't be like you're making stew. Should be very moderate with your tomatoes and co and it should also be able to match up with the beans when you mix it. Not too much and not too small. |

Ishilove: I've never heard of fried beans. What's the recipe? I never did until I met oga. Ingredients Fresh tomatoes Fresh pepper Crayfish Fish (optional) Seasoning Onion Groundnut oil Salt. **********#Preparation******* Select your beans and put on the fire to boil, remove the first water after 15mins and put a fresh one back to continue cooking the beans until it's very soft then add Maggi and crayfish. In a separate pot or pan, heat your oil, add onion, sliced or grated tomatoes, pepper, a pinch of salt and fry till you think it's very much okay. If you're using fish, you could add it while frying the tomatoes. Once you're done frying, add the fried tomatoes and co into the pot of boiled beans and put it back on the fire for 5more mins. PS: this was how I was taught dunno if someone else has another way of doing it. |

sexymomiyo: please can you explain how to prepare this? thanks in advance Ok ma. Ingredients Corn Plantain/banana Oil Crayfish Seasoning Pepper. Select your corn, wash and dry (just to remove dirt). Once it's dried, grind to powder. Pour the powdered corn into a mortar/blender, get your plantain/banana, add to the powdered corn in the mortar/blender and keep pounding/blending until they're both properly mixed up. Pour in a bowl, add a little water then your palm oil, crayfish, seasoning and pepper to taste. Once you're satisfied with the taste, pour in leaf, cellophine or aluminium foil and cook for 30mins... |

Akposy: Happy Sunday Chefs et Foodies.
I couldn't sleep last night. I kept seeing that pancake and the mummy's face..the one with the pancake. I knew I didn't like pancakes because the one I made during my teenage days was a big error. Since then, I haven't tried it again.
With no maple syrup or fruit in my house, I decided to make my own syrup.. Vanilla syrup (made with granulated sugar, caster sugar, brown sugar, vinegar, .margarine and vanilla). . Also, I used juicy raisins as topping. This is the fluffiest and softest pancakes I've ever had. I'm so proud of myself...I conquered the pancake phobia. Thanks to the guy that posted d pancake earlier...... Next try should be Chef Prestonn plantain moi moi My pancake is never thick like this on the inside please I'll need your receipe.. |
