The mistake most Christians make is to use the OT to explain the NT, it should be the other way round, for the fact Jesus said it twice should have settled the issue. Again no one has ever seen God, not Adam not even the angels, the closest they saw of the physical attributes of God was Christ Jesus, 1Ti 3:16 KJV* And without controversy great is the mystery of godliness: God was manifest in the flesh, justified in the Spirit, seen of angels , preached unto the Gentiles, believed on in the world, received up into glory.

It was figurative for choices, to even make more easier to understand, the term of life or knowledge of good and evil were not quoted in the NT, the only mention of the tree of life was in the book of Revelation and we all know it was talking about Christ.
