You have more chance of an un-skilled labor job than something with a Nigerian degree. (you don't even say the subject!)

I think that she will need a letter from the father saying that he knows about the trip and that it is ok for the child to travel with the mother.

You are making a common mistake.
The statement must show your funds in the account for a MINIMUM of 28 days.
But you can present a three month (or 6 month) statement if you want. This helps to show your cash flow in and out.
You should print your statement close to the interview date. If there is a long gap between printing and interview anything could have happened to the funds.
