Wild blackberry jam. I made from blackberries I foraged in the village. So good with authentic French baguette.

All ingredients in the 2nd picture.

Strictly one teaspoon of the pectin. As for the sugar and chia seeds, you can use however much or little your heart desires. Or use natural sugar substitute like monk fruit and stevia.

Masa 🍙!!! I made masa (aka waina) for the first time.

For the naive, Masa is a Northern Nigerian Rice Cake. It can be made sweet or savory; I prefer them sweet. I prefer my masa sweet. It is one street food I enjoy in the North.

I made chicken pepper sauce & served with my homemade masa.

Making this was not easy o. Initially, I added to much water while blending, this spoilt the entire batter. I had to add and add lot of cooked rice (normal rice) to thicken the batter.

I sha enjoyed my Masa 😋. My new Masa pan did a very very good job. It is one kitchen investment I appreciate buying.

The Servicom guy was confused. He doesn’t even know the price. He kept me on hold for a long time before referring to the office.

I hope someone that have done it respond. I already sent a mail to them confirming if it is true or just extortion

I did this today…..

Update.
I got to their office here in Jos to capture after registering and paying the 2,600 online Dec 31st.

They asked why I did it online that I will still have to pay another processing fee of 15,000 naira for them to open file et other nonsense they were saying.

Please guyz, what is the way forward? I have no intent of paying extra money for something that is 2,600.

I tried calling NIS line, they picked, sounded off and referred me back to the Servicom office they tried to extort me 🤦🏽‍♂️

I don’t take orders nor do commercial at the moment. I cook for myself and friends (sometimes).
Yes, I’m a certified Pastry Chef 🧑🏾‍🍳. I studied French Pastry at Red Dish, Abuja. I don’t practice though.

Please, can you share the process on how to make the juice?
Cane Juice Recipe

2 sugar cane - 200 naira
1 big lemon - 50 naira
1 medium ginger
1/2 cup water

Peel and washed your sugar cane.
Cut into small pieces so it can blend well.
Note: This is supposed to be done with a juicer but I don’t have it so I used this option.

Blend a small portion using the half cup of water. Sieve out the juice with a cheese cloth.
Pour the sieve juice and blend another batch.
Repeat till you’ve blended all
You should add in the ginger and zest of lemon to any of the batch during blending.
Note: The lemon zest contains the essential lemon oil. Add it, don’t waste it.

After the entire process, squeeze in your lemon juice via a sieve.
Mix and refrigerate.
Trust me, it is going to be concentrated and very yummy using this method.

Bonus: You can throw in the lemon back into your bathing water after squeezing the juice. It has anti microbial and other benefits. Use it as nature’s dettol

Again, this is a healthy drink with lot of benefits.
