They prefer the conventional way of cooking it, by using edible potash. I am always careful whenever I feel like eating Nkwobi or isi ewu outside. Some people add too much of the edible potash, when preparing the sauce. Which can trigger stomach upset.

The thing that you’ve got to be careful of with potash is the likelihood of a pregnant woman eating the meal. There’s a chance of miscarriage when they do. In those cases it’s definitely better to use baking soda and when you’re cooking for a big group of people you just don’t know who’s going to turn up to eat your food. It’s definitely better to be safe.

I use it as mouth wash ....

Yeah, I use strawberry, baking soda and a touch of vinegar sometimes for additional tooth-cleansing. I use Listerine and all that as well (a drop of peppermint essential oil doesn’t kill, either) but but baking soda is a very powerful anti-bacterial. I even use it to clean (another important indication).

Nkwobi made with baking soda oil-curdles just fine. I don’t know why some people are so against it.

People who can’t/don’t want to use aka-unwu/potash also use it for recipes what call for curdled palm oil (abacha-ncha, nkwobi, isi-ewu) and to eliminate the tangy taste of tomatoes for stew (importantly you can’t really use more than half a teaspoon for that without the taste and colour becoming unappetising).

It’s not a competition but I’d say Akwa Ibom/Cross River people are the least liable to be foul-mouthed/rough like that. The people are so chill.
