It was sweet not too sugary, moist on the inside,tasted very 'mangoish' I got some accolades from my family grin grin grin. I baked it this evening to eat tomorrow but they have already eaten almost half of it grin

I felt it wont come out fine because of the little water I added to rinse the blended pulp out but it was still nice.

Very simple, cheap and straight forward to make.

Oatmeal Cookies

112g margarine
½ cup white sugar
½ cup brown sugar
1 egg
¾ cup flour
1 tsp vanilla extract
½ tsp cinnamon
½ tsp baking soda
¼ tsp baking powder (optional though)
1½ cup oat
⅔ cup raisins (optional)

Mix your sugar and butter till it is light and fluffy
Add in the vanilla and egg and mix till it is even
Sieve in the baking soda, powder, cinnamon and flour and fold in
Lastly, gently add in your oat and raisin. Fold in carefully...you don't want to over mix
You should refrigerate for 30 mins or so...not compulsory though
Shape in ball and bake in a preheated oven for 10 mins. Remove once the edges are brown. The middle will be soft but don't be tempted to leave it in. Once it cools, it will be nice and chewy

You can also use cold butter. It helps the dough not to over spread. Check the pics on how the ball should look like

Mango Cake

1¼ cup mango puree
2 eggs
¾ cup sugar
1 tsp baking soda
1 tsp baking powder
1½ cup AP flour

For the mango puree
I don't have a blender so i de-skined and mashed till it looked like something blended but I noticed it affected the cake...the fibers and lumps made some part of the baked cake very soft and inedible. I advice you de-skin and blend till it is very smooth

For the cake
Whisk/mix the eggs and sugar together
Add in the mango puree and mix properly
Sieve in your baking soda, powder and flour
Fold in gently
Pour the batter in a prepared pan
Bake in a preheated oven for about 30 - 40 mins

These cinnamon rolls were a struggle. The shape and size didn’t come out as I wanted (I wanted it to fill the pan and press against the sides so it will have roundish shape but square at the places where you pull it apart) . And they weren’t as moist as I wanted .But they taste good and icing helped.

Plus it’s finished so not too bad I guess.
They ain't bad. Was it the yeast?

I don't get satisfied no matter what I eat. I'm always eating like an hungry dog and it has made me go broke. I don't think it's normal.
Also, I drink at least 2 litres of water daily (a must)..sometimes 3 litres yet I still eat like an igbo smoker

Lol. I understand. I saw someone saying shit about how some of us here are fake and post unrealistic servings (too small). Some of us actually struggle to eat. I have ulcer and my people know. So, they take it upon themselves to call me everyday and ask if I have eaten grin. The only thing I can eat ferociously is “swallow” (fufu, semo, pounded yam, eba) and afang soup. Every other is a struggle.

I envy people with very good appetite. Please eat well... grin grin

I've been having an issue for over a month now. I eat and I don't get satisfied at all. I thought it was worm issue, so I dewormed but it's still getting worse and person no get money to eat o. Maybe I will visit the clinic when this is over cos I can't understand anymore
