I really don't know what happened. It maybe because I added too much vanilla essence or because I used a big plastic bowl for 3 eggs or because I melted the sugar and egg mix over double boiler before I whipped.

I use plastic bowl to whip eggs so I don't think that's it. It might be any of the other 2. I think its the melting of the sugar and eggs. Anyways baking na trial and error until u perfect it

Something funny and annoying happened yesterday.

So I sundried dry peppers on a tray on top BooBoo's car. He asked me to put it there o. Later we decided to drive out around the neighborhood to take fresh air as we tire to stay inside house.
Would you believe we both forgot to remove the pepper tray from the roof of the car?

Only for me to say lemme blend my pepper and keep this morning as there's light, I suddenly remembered I last saw the pepper on the car roof #tears

Cococandy oo. Your pancakes are lovely! This was exactly what I wanted to make o....I mean the cream topping. I planned on using Swiss meringue but the egg failed to get to stiff peak. I was frustrated so I gave up

how come your eggs refused to get to stiff peaks whn you have a hand mixer? Or u mistakenly got the yolk inside the white?

its not a total waste the hand blender I mean. U can use it for your eggs whn making sponge cake and pancakes. Even mixing akara and co

no. Hand mixer cannot knead bread dough. It has to be a stand mixer and a strong one at that.

With Joy in my heart, I wish to announce to you guys that I am now a Pastry Chef. I graduated on Thursday.
Culinary School was hard for me but local boy scaled through. There were times i requested for deferment but peeps kept encouraging me and boosting my weakened morale.

Thanks all for your kind words. Next stop is Cuisine chef course...I don't know when but it will happen by God's grace.. Amen!

The fruit tart was my exam work.
Crust (dough) was made with Pâté sableé dough, filling was a combination of Lemon curd and strawberry compote. Topping Swiss meringue mixed with pastry cream. strawberry and banana slices.

I've never tried adding sugar. I guess you can. What I do if I want it sweet is to add a can of condensed milk to the milk when heating it. Condensed not ordinary liquid milk.

I love Coconut rice, but my son will not allow me take so much time to cook it. I think I will have to learn to blend my coconut because I have always been grating mine.

I suffer from coconut breaking phobia I always imagine it piecing my vein and then me bleeding to death
So if no one is around to break n bring out the flesh for me I just use the powdered coconut cream.
