Peppered gizzard makes for a wonderful appetizer, small chop or just as a side to your main course. Enjoy the recipe on how to prepare peppered gizzard!

Peppered Gizzard like peppered snail, make for excellent sides or appetizers. They can be served at special occasions such as parties or even at home to entertain guests as small chops. Here are the ingredients for preparing peppered Gizzards;

Ingredients for Nigerian Peppered Gizzards

500g (1.1 lbs) chicken gizzards
3 habanero peppers (or to your taste)
2 medium onions
1 big stock cube
1 teaspoon thyme
Salt (to taste)
2 tablespoons vegetable oil
Toothpicks (for serving)
Directions

Step 1

Cut the onions into big chunks.

Step 2

Pound or blitz the peppers (no water).

Step 3

Marinate the gizzards with the seasonings (Optional)

Step 4

Add the onions (if gizzard is Marinated)

Step 5

Pour water to just under the level of the gizzards and start cooking at medium heat.

Step 6

When the gizzards are well done, remove the big chunks of onions.

Step 7

Increase the heat to high and stir constantly till all the remaining liquid in the pot is absorbed. You don't want to lose any flavour by pouring away the gizzard stock.

Step 8

Add salt to taste and stir very well.

Step 9

Lay the gizzards flat in a baking bowl.

Step 10

Grill in an oven at 170°C or 338°F till the top side is dry and brown. Turn them and grill the underside too till dry and brown. If you don't have an oven, just deep-fry them.

Step 11

Heat the vegetable oil in another pot.

Step 12

Add the pepper and the grilled/deep-fried gizzards.

Step 13

Stir very well till the pepper is evenly distributed on the gizzards.

Step 14

Rejection is a painful confidence deflating experience. No one who encounters rejection ever comes out smiling, wishing it could happen again. Truth is we are deeply pained when we are rejected not necessarily because we didn’t have our way but rather because it implies we were not good enough for that someone or something we wanted badly.

It can be a strong de-motivator even leading to loss of self confidence. Rejection however, is only painful to those who choose to let it become a bigger obstacle than it needs to be. Many very successful and happy people have overcome rejection to become better than they were before. In reality rejection is only an experience and an opportunity to become better.

Here are a few tips to help out in handling rejection;

Take stock of the situation

When you’re rejected, first relax and reflect on what just happened. Why were you rejected? Asking this question could offer you insights into what really happened. Perhaps that lady or gentleman you asked out isn’t prepared for a relationship or doesn’t feel attracted to you romantically, their decision to say no to you does not mean the world is coming to an end. It only means that when the universe closes one door another more more suitable door will be opened for you in the right place and time in your life. Rejection does not mean you are not good enough. It only means that this person or thing that gave you a negative is not right for you.

Drop the ill feelings

Don’t get angry or feel sorry for yourself – sure this isn’t easy but it is very necessary. Feeling sorry for yourself or getting angry with the object or source of rejection is a complete waste of your time and will only hurt you eventually. While the person who rejected you has moved on and isn’t aware of your ill feelings, you’re busy getting your blood pressure up ultimately making your pain even greater. Do things that make you happy and try to let go of your rejection experience.

Learn your lesson

Once you’re done with the ill feelings, it’s now time to learn your lesson. If the reason you were rejected is due to your own fault, take heart and remember to err is human. What did you fail to do or actually did that messed things up for you? Once you know the reason you may have contributed to this rejection, it is now your job to make sure you don’t repeat the same mistake again.

Move on

The good news about being rejected is that you might actually find something or someone far better than what you thought you lost. Think of the happily married husband whose first love left him or turned him down and is so happy to have found someone he cherishes so much. He’ll always inwardly thank his ex for rejecting him. Likewise many successful entrepreneurs who were turned down or failed to secure lucrative jobs have gone on to become very successful individuals. We have to admit to ourselves that there's a certain motivating magic in rejection. Be inspired and take advantage of it!

When it comes to hosting a classic romantic dinner, the challenge is always how to create that magical spark that will make the evening a memorable one. A romantic dinner for two is the most tried and tested way to wooing your date for a serious relationship or just another way to add colour to your existing relationship or marriage. To host a memorable romantic dinner you’ll need to get a few things in place. Mind you these are not guaranteed to create Amour as this ulitimately depends on the chemistry between two people, but it sure creates the environment for it;

Good Music

Everyone has his or her own idea of what romantic music should sound like. But you’ll agree with me that soft, slow and soulful music is ideal romantic music on a date. If you are feeling extra confident and really want to blow your date away, hire a guitar player or muscian to play some live music to make your dinner date unique.

Romantic Ambience

Setting the right mood for a date is very important. It's all about captivating the senses, evoking a mood and fine tuning it for romance. Firstly pay attention to lighting. Lighting is everything. You don't want harsh neon lights flooding the space as it is known to foster feelings of discomfort. Always dim the lights or use natural light by way of candles or lamps. This creates a softer dreamlike atmosphere and goes a long way to creating that relaxing environment you need to form a romantic connection. Make sure the air is sensously fragrant by lighting scented candles or inscense.

Table and Chairs or None

A small cosy table designed just for two will enable both dates to have a proper face to face encounter over dinner. Dinner without tables and chairs is not such a bad idea either. It makes the whole experience more informal and relaxed. If you're both sitting on a rug on the floor it might melt the ice and provide the right mood to kickstart a great evening. Moving the dinner outdoors for a mini picnic in the garden is also a good idea if you are feeling creative.

Great Menu

A romantic meal should at least be three courses. The idea is that you want to prolong the dinner experience giving you time to connect with your date. The variety of a three course meal also provides talking points e.g. you can comment on the food, so that the conversation never runs dry. Seafood is always romantic, interesting and lets not forget tasty for a main course. Make sure you pick appetizers you can share like Samosa's and spring rolls, giving ample opportunity for your fingers to meet.

Perfect Entertainment

Always have a plan for after dinner, like taking a long walk together, watching a movie or Soap or just light hearted chit chat. A parting gift for the occasion may not be a bad idea. Use your imagination! *wink*

Reminds me of an experience I had last year while travelling from Okpo to Ankpa in Kogi state during my NYSC, A gang of 4 robbers had waylaid a Trailer and shot the driver on the shoulder who ran the race of his life. The whole road was blocked as the robbers were determined to rob as many people as possible. Fortunately most of the travellers had reversed their cars full speed out of the reach of the robbers.

Then 15 minutes or so later, a team of police men in a patrol vehicle sped towards the robbers accompanied by local vigilante. I heard the robbers were later apprehended - one was gunned down while the other three were arrested alive.

It's not so bad with the Nigerian Police Force, many of them are a disgrace but a few of them really want to do their jobs!
